Cabernet Sauvignon Reserve 2022
Despite winter damage leading to a small crop for many in New York, the 2022 vintage produced fantastic wines with highly concentrated flavors. Our estate-grown Cabernet Sauvignon is a great example, with fruit picked in mid-October after ample time to ripen. A twelve-day fermentation included three pumpovers daily before aging for sixteen months in neutral French and Hungarian oak. The wine is full-bodied with structured tannins and a zip of acidity. Aromas of graphite, smoke, and dark fruit come into focus on the palate with notes of blackberry, cherry, black peppercorn, dark cocoa, and baking spices. Drink now (with braised meats, roasted root vegetables, carnitas tacos, or grilled eggplant), or hold as this wine has great aging potential.
